Two opposite symptoms, one usual suspect
The milk is borderline. Or the exact opposite — the lettuce at the back of the crisper comes out frozen solid and the eggs have ice crystals in them. Opposite complaints, same usual culprit: the temperature control, better known as the thermostat.
There is a third version of the fault: the fridge that never shuts up. If the compressor hums around the clock, the thermostat has likely lost its ability to sense “cold enough” and never switches off. That costs you on the power bill daily — and it is far better fixed now than in December, when the fridge is fighting 35-degree air.

How a capillary-tube thermostat actually works
The mechanical fridge thermostat is a lovely bit of pre-electronic engineering. A thin copper capillary tube runs from the control body to the evaporator or the cold air path, charged with a small amount of gas. As the fridge warms, the gas expands and pushes on a diaphragm inside the control; at a set pressure the diaphragm snaps a switch and the compressor kicks on. Cool down far enough and it snaps back off. The dial simply changes the spring tension the diaphragm has to fight.
Age attacks it two ways. The gas charge can slowly leak down, so the control thinks the cabinet is colder than it is — the compressor barely runs and the fridge sits warm. Or the spring and contacts wear so the cut-out drifts colder — the compressor over-runs and your salad greens come out as garnish-flavoured ice blocks. Either way, the fix is the same part.
The dial is a setting, not a thermometer
Honesty time: the numbers on a fridge dial are not degrees. Three is not a temperature, it is a vibe. A higher number just means more spring tension, longer compressor runs and a colder cabinet. The only way to know what your fridge is actually doing is a $10–$20 fridge thermometer in a glass of water on the middle shelf overnight. You are aiming for 3–4 degrees in the fresh-food section and about minus 18 in the freezer.
That thermometer is also your diagnostic tool: dial at its normal position but the water reading 8 degrees, or the crisper at freezing point, is evidence — not a hunch.
Rule it in before you spend a dollar
A few free checks first, because not every warm fridge is a thermostat:
- Listen for the click. With the fridge quiet, slowly rotate the dial from minimum to maximum. A healthy thermostat gives a firm click and the compressor starts. No click at any position on a powered fridge is a strong sign the control is dead.
- Check the compressor pattern. Normal is a cycle: run for a stretch, rest for a stretch. Running 24/7, or barely running at all while the cabinet sits warm, points at the control.
- Frost-free caveat. On a frost-free two-door fridge, a warm fresh-food section with a cold freezer can also be a failed defrost system or a blocked air damper — check the freezer’s back panel for a wall of ice before blaming the stat. The swap: an honest look at the job
On many older fridges the thermostat is one of the most accessible parts in the machine. It usually lives behind the dial housing inside the cabinet, held by a couple of screws, with two or three spade terminals and the capillary tube clipped along the cabinet wall.
- Unplug the fridge at the wall. Not standby — unplugged.
- Unclip or unscrew the control housing and photograph the wiring before anything comes off.
- Transfer the wires one at a time to the same terminals on the new control.
- Feed the new capillary tube along the same route as the old one, gently — do not kink it, do not snap it, and never cut it “to tidy it up”. The tube is the sensor.
- Refit the housing, plug in, set the dial mid-range, and check with your thermometer over the next day.

The line you do not cross: the sealed system
Clear and non-negotiable: the sealed refrigeration system — compressor, refrigerant gas, condenser and evaporator piping — is licensed territory. In Australia, handling refrigerant legally requires a licensed refrigeration mechanic; there is no DIY version of that job. If the thermostat clicks and the compressor runs but the cabinet still will not pull down to temperature, the fault has likely moved into the sealed system, and the right move is a repairer’s opinion — often followed by an honest chat about whether an old cabinet is worth regassing at all.
